For a first-timer, choose Osetra over Beluga. It's firmer and nuttier, so it's easier to like on the first spoonful. Beluga's soft, delicate pearls are wonderful, but much of what makes them special is lost on someone who doesn't yet know what to expect.
Add the spoon. Most people don't own a non-metal spoon, and silver or steel can leave a metallic taste. A mother of pearl spoon turns a tin into a complete gift they can open and enjoy straight away.

How to send caviar as a birthday surprise
Caviar isn't a gift you can leave on the doorstep. It arrives chilled in an insulated bag with frozen ice packs, but it needs to go into a fridge soon after. A little planning keeps the surprise intact:
- Pick a time someone will be there. Home in the evening works, and so does an office with a fridge.
